Cinnamon Scalloped Sweet Potatoes

  • 4 large sweet potatoes, peeled and thinly sliced
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
  3. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5 minutes.
  4. Add brown sugar, cinnamon, nutmeg, salt, and pepper to the sauce. Stir to combine.
  5. Layer half of the sliced sweet potatoes in a greased baking dish. Pour half of the sauce over the potatoes.
  6. Repeat with remaining sweet potatoes and sauce layers. If using, sprinkle cheddar cheese evenly on top.
  7. Cover the dish with foil and bake for 35 minutes. Remove foil and bake an additional 15 minutes until the top is golden and sweet potatoes are tender.
  8. Let cool for 5 minutes before serving.

Notes

For added depth, try topping with toasted pecans or a sprinkle of fresh thyme before serving.
