Delight in these crispy, golden sourdough churro bites coated with cinnamon sugar—a perfect bite-sized treat combining tangy sourdough with classic churro flavors.

  • 1 cup sourdough starter discard
  • 1 cup all-purpose flour
  • 1/2 cup water
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • Vegetable oil for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Instructions

  1. In a mixing bowl, combine sourdough starter discard, flour, water, sugar, cinnamon, salt, and baking powder. Stir until a smooth dough forms.
  2. Heat vegetable oil in a deep fryer or heavy skillet to 350°F (175°C).
  3. Using a small spoon or your hands, shape the dough into bite-sized balls.
  4. Carefully drop the dough balls into the hot oil, frying in batches to avoid overcrowding.
  5. Fry for 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking.
  6. Remove with a slotted spoon and drain on paper towels.
  7. Mix granulated sugar and cinnamon in a shallow bowl. Roll the warm churro bites in the cinnamon sugar mixture until fully coated.
