This cinnamon swirl banana bread is a moist and flavorful treat featuring ripe bananas and a rich cinnamon sugar swirl, perfect for breakfast or dessert.

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ½ cup sour cream
  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a separate large bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Mix in mashed bananas and sour cream until combined.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. In a small bowl, mix brown sugar and cinnamon together.
  8. Pour half of the banana bread batter into the prepared pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  9. Pour remaining batter over the cinnamon sugar layer, then sprinkle the remaining cinnamon sugar on top.
  10. Using a knife, gently swirl the cinnamon sugar into the batter to create a marbled effect.
  11. Bake for 60–70 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra moist bread, use overripe bananas and consider adding a handful of chopped walnuts for texture.
