A Steaming Bowl of Classic French Onion Soup

Savor the rich, comforting flavors of classic French onion soup. This deeply flavorful soup features caramelized onions in a savory broth, topped with crusty bread and melted Gruyère cheese.

  • 6 large yellow onions, thinly sliced
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 cups beef broth
  • 1 cup dry red wine (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 baguette, sliced into 1-inch thick rounds
  • 4 ounces Gruyère cheese, shredded

Instructions

  1. Melt butter and olive oil in a large Dutch oven or pot over medium heat. Add onions, sugar, salt, and pepper.
  2. Cook onions, stirring occasionally, for 30-45 minutes, or until deeply caramelized and golden brown. Reduce heat as needed to prevent burning.
  3. Add beef broth, red wine (if using), Worcestershire sauce, and bay leaf to the pot. Bring to a simmer and cook for 20 minutes.
  4. Preheat oven broiler. Place baguette slices on a baking sheet and broil for 1-2 minutes per side, or until lightly toasted.
  5. Ladle soup into oven-safe bowls. Top each bowl with toasted baguette slices and shredded Gruyère cheese.
  6. Broil for 2-3 minutes, or until cheese is melted and bubbly.
  7. Let cool slightly before serving.

Notes

For an extra layer of flavor, add a splash of sherry vinegar to the soup during the last few minutes of cooking. Serve immediately for the best taste and texture.
