  • 1/2 cup raw cashews
  • 1/4 cup shredded coconut, unsweetened
  • 1 tablespoon coconut oil, melted (optional)

Instructions

  1. Combine pineapple chunks and cashews in a food processor.
  2. Pulse until the mixture is finely chopped and starts to stick together.
  3. If using, stir in melted coconut oil for added moisture and flavor.
  4. Roll the mixture into small bite-sized balls.
  5. Roll each ball in shredded coconut until fully coated.
  6. Refrigerate for at least 30 minutes to allow the bites to firm up before serving.
