Cottage Cheese Cloud Bread is a light and fluffy low-carb bread alternative made using cottage cheese and eggs, perfect for sandwiches or as a snack.

  • 4 large eggs, separated
  • 4 oz (half cup) low-fat cottage cheese
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • Optional: herbs or spices for flavor (e.g., garlic powder, chives)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites with cream of tartar until stiff peaks form.
  3. In another bowl, blend the cottage cheese, egg yolks, and salt until smooth.
  4. Gently fold the egg whites into the cottage cheese mixture in batches, careful not to deflate the egg whites.
  5. Using a spoon, dollop the batter onto the baking sheet to form 6 equal rounds.
  6. Bake for 25–30 minutes or until golden and set.
  7. Allow to cool before serving.

Notes

For extra flavor, add your favorite herbs or a pinch of garlic powder to the batter before baking.
