This Creamy Pasta Soup is a comforting and flavorful dish, perfect for a chilly day. It’s quick to make and packed with tender pasta, creamy broth, and your favorite vegetables.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup vegetable broth
  • 1 cup small pasta (such as ditalini or small shells)
  • 1 cup chopped vegetables (such as carrots, celery, and zucchini)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Pour in the chicken broth and vegetable broth. Bring to a boil.
  3. Add the pasta and chopped vegetables. Reduce heat and simmer until the pasta is cooked through and the vegetables are tender, about 8-10 minutes.
  4. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  5. Heat through, but do not boil.
  6. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, use homemade chicken broth. You can also add cooked chicken or sausage to the soup for extra protein.
