Creamy Roast Garlic and Lemon Pasta Sauce

This creamy roast garlic and lemon pasta sauce combines the rich, mellow flavors of roasted garlic with bright, zesty lemon for a luscious and refreshing pasta experience.

  • 1 whole garlic bulb
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 lemon (zest and juice)
  • Salt and freshly ground black pepper to taste
  • 8 ounces pasta of choice
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the top off the garlic bulb to expose the cloves, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. When garlic is cool enough to handle, squeeze the roasted garlic cloves out into a blender or bowl.
  4. Add the roasted garlic, remaining 1 tablespoon olive oil, heavy cream, Parmesan cheese, lemon zest, and lemon juice to the blender. Blend until smooth and creamy.
  5. Pour the sauce into a skillet over medium heat and warm gently. Season with salt and pepper to taste.
  6. Toss the cooked pasta in the sauce until evenly coated.
  7. Serve immediately, garnished with chopped fresh parsley if desired.

Notes

For a lighter option, substitute half-and-half for heavy cream or add grilled chicken for a protein boost.
