Homemade Creamy Smothered Chicken and Rice

This creamy smothered chicken and rice is the ultimate comfort food. Tender chicken breasts are smothered in a rich, flavorful sauce and served over fluffy rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces sliced mushrooms
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • Cooked rice, for serving

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Add onion and mushrooms to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth until smooth.
  5. Bring to a simmer and cook until sauce has thickened, about 5-7 minutes.
  6. Stir in heavy cream and parsley. Season with salt and pepper to taste.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer for 5 minutes to heat through.
  8. Serve over cooked rice.

Notes

For an extra layer of flavor, try adding a splash of white wine to the sauce while it’s simmering.
