  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 4 chicken thighs, boneless and skin-on
  • 1 cup buttermilk (for chicken marinade)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 cups vegetable oil (for frying)
  • Maple syrup, for serving

Instructions

  1. Marinate the chicken thighs in 1 cup buttermilk with paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper for at least 1 hour.
  2. Preheat the waffle iron according to the manufacturer’s instructions.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, combine 1 3/4 cups buttermilk, eggs, and melted butter.
  5. Mix the wet ingredients into the dry ingredients until just combined; do not overmix.
  6. Heat vegetable oil in a deep skillet to 350°F (175°C).
  7. Remove chicken from marinade, letting excess drip off, then fry in hot oil until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.
  8. Pour waffle batter into the preheated waffle iron and cook until golden and crisp.
  9. Serve the crispy fried chicken atop the warm waffles with maple syrup drizzled on top.

Notes

For extra flavor, add a pinch of cayenne to the waffle batter or serve with hot sauce alongside the syrup.
