Creamy Crock Pot Crack Potato Soup

This Crock Pot Crack Potato Soup is creamy, cheesy, and loaded with bacon for a flavor explosion! It’s the perfect comforting meal for a chilly day, and the slow cooker makes it incredibly easy to prepare.

Ingredients

  • 6 medium potatoes, peeled and cubed
  • 1 (1 ounce) package ranch dressing mix
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) package cream cheese, softened
  • 6 cups chicken broth
  • 1 pound bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions, for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Place potatoes, ranch dressing mix, cream of chicken soup, cream cheese, and chicken broth in a crock pot.
  2. Season with salt and pepper to taste.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
  4. Use an immersion blender to partially blend the soup to desired consistency. Alternatively, carefully transfer some of the soup to a regular blender and blend until smooth, then return to the crock pot.
  5. Stir in crumbled bacon and cheddar cheese until cheese is melted.
  6. Garnish with green onions (optional) and serve hot.

Notes

For an even richer flavor, use bacon grease to sauté the potatoes before adding them to the crock pot. You can also add a pinch of red pepper flakes for a little heat.
