This comforting Crockpot Chicken Spaghetti combines tender chicken, creamy cheese, and perfectly cooked pasta in a slow cooker for an easy and delicious weeknight meal.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 12 oz spaghetti pasta, broken in half
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, finely chopped
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup diced tomatoes with green chilies (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a separate bowl, mix together cream of mushroom soup, cream of chicken soup, chicken broth, onion, bell pepper, garlic, chili powder, salt, and black pepper.
  3. Pour the soup mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6 hours or on high for 3 hours, until chicken is cooked through and tender.
  5. Remove chicken from crockpot and shred it with two forks.
  6. Add broken spaghetti pieces and diced tomatoes with green chilies (if using) into the crockpot. Stir to combine.
  7. Return shredded chicken to the crockpot and stir again.
  8. Top with shredded cheddar and mozzarella cheese.
  9. Cover and cook on high for another 30-45 minutes until the pasta is tender and the cheese is melted.
  10. Stir gently before serving and enjoy warm.

Notes

For extra flavor, garnish with fresh cilantro or green onions and serve with a side of garlic bread.
