  • 2 lbs boneless, skinless chicken thighs
  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 cup BBQ sauce
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Instructions

  1. Place chicken thighs in the bottom of a slow cooker.
  2. In a medium bowl, combine crushed pineapple, BBQ sauce, brown sugar, soy sauce, garlic powder, and ginger. Mix well.
  3. Pour the pineapple BBQ sauce mixture over the chicken thighs.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  6. Shred the chicken with two forks directly in the slow cooker.
  7. Serve the shredded chicken over rice, buns, or as desired.
