This Curried Sweet Potato and Apple Soup is a comforting and flavorful dish, perfect for a chilly day. The sweetness of the potato and apple is beautifully balanced by the warmth of the curry spices.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large sweet potato, peeled and cubed
  • 2 medium apples, peeled, cored, and chopped
  • 4 cups vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, a swirl of coconut milk, toasted pumpkin seeds

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, curry powder, ginger, and red pepper flakes (if using) and cook for 1 minute more, stirring constantly.
  3. Add sweet potato and apple to the pot and stir to coat with the spices.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until sweet potato and apple are tender.
  5. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  6. Return the soup to the pot and stir in coconut milk. Season with salt and pepper to taste.
  7. Heat through and serve hot, garnished with your favorite toppings.

Notes

For a richer flavor, roast the sweet potato and apples before adding them to the soup. You can also add a squeeze of lime juice for brightness.
