Dutch Oven French Onion Soup

This rich and comforting Dutch Oven French Onion Soup features caramelized onions simmered to perfection, topped with toasted bread and melted cheese for a classic, hearty meal.

  • 4 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1/2 cup dry white wine
  • 8 cups beef broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • Baguette slices, toasted
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large Dutch oven, melt butter with olive oil over medium heat.
  2. Add sliced onions and sugar; cook, stirring frequently, until onions are deeply caramelized, about 40 minutes.
  3. Stir in minced garlic and cook for 1 additional minute.
  4. Pour in white wine to deglaze the pot, scraping up browned bits from the bottom.
  5. Add beef broth, thyme sprigs, and bay leaf; bring to a simmer and cook uncovered for 30 minutes.
  6. Season with salt and pepper to taste; remove thyme and bay leaf.
  7. Preheat the broiler. Ladle soup into oven-safe bowls, place toasted baguette slices on top, and sprinkle generously with Gruyère cheese.
  8. Place bowls on a baking sheet and broil until cheese is melted and bubbly, about 3-5 minutes. Serve hot.

Notes

For added depth, use homemade beef broth and try grating a mixture of Gruyère and Parmesan cheese on top.
