These easy egg muffins are packed with spinach and feta for a healthy and delicious breakfast or brunch. They’re perfect for meal prepping and can be customized with your favorite ingredients.

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Red pepper flakes, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 6-cup muffin tin.
  2. In a large bowl, whisk together eggs and milk.
  3. Stir in spinach, feta cheese, salt, pepper, and red pepper flakes (if using).
  4. Pour the egg mixture evenly into the prepared muffin tin.
  5. Bake for 20-25 minutes, or until the muffins are set and golden brown.
  6. Let cool slightly before removing from the muffin tin.
  7. Serve warm or at room temperature.

Notes

For a heartier muffin, add cooked sausage or bacon. Store leftover egg muffins in the refrigerator for up to 3 days.
