Crab Boil Recipe

Gather your friends and family for a classic Crab Boil, a vibrant and flavorful communal meal packed with tender crab, sausage, corn, and potatoes, all simmered in a zesty, aromatic broth. This recipe delivers a taste of the coast, perfect for any gathering.

  • 2 lbs Dungeness or Snow crab clusters
  • 1 lb smoked sausage (andouille or kielbasa), cut into 1-inch pieces
  • 1.5 lbs small red potatoes, halved
  • 4-6 ears of corn, husked and halved
  • 1 large onion, quartered
  • 1 head of garlic, halved horizontally
  • 1/2 cup crab boil seasoning (e.g., Old Bay, Zatarain’s)
  • 2 lemons, halved for boiling + wedges for serving
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsalted butter, melted (for serving)
  • Optional: hot sauce or cayenne pepper to taste
  • Salt to taste (after cooking, if needed)

Instructions

  1. Fill a very large stockpot (at least 12-quart capacity) with enough water to cover all ingredients. Add the quartered onion, halved garlic head, crab boil seasoning, and the 2 halved lemons to the water. Bring to a rolling boil over high heat.
  2. Once boiling, carefully add the halved red potatoes to the pot. Cook for 10-15 minutes, or until the potatoes are just tender when pierced with a fork.
  3. Add the smoked sausage and corn halves to the pot. Continue to boil for another 5-7 minutes, allowing the flavors to meld and the corn to cook through.
  4. Finally, add the crab clusters to the pot. Cook for 5-8 minutes, or until the crab shells turn bright red and the meat is opaque and cooked through. Do not overcook.
  5. Carefully drain the entire contents of the pot using a large colander or by lifting the ingredients out with a slotted spoon.
  6. Transfer the drained crab, sausage, corn, and potatoes to a large serving platter, or for a traditional experience, spread them directly onto a newspaper-covered table.
  7. Drizzle generously with the melted butter and fresh lemon juice. Serve immediately with extra lemon wedges and hot sauce on the side, if desired.

Notes

For an extra layer of flavor and heat, consider adding a few dashes of your favorite hot sauce or a pinch of cayenne pepper to the boiling water along with the crab boil seasoning.
