  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/4 cup milk
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup mixed dried fruits (raisins, cranberries, chopped figs)
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini cake pan or line with paper liners.
  2. In a medium bowl, cream the softened butter and brown sugar together until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat well.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients alternately with milk, mixing until just combined.
  6. Fold in the mixed dried fruits and chopped nuts.
  7. Divide the batter evenly into the mini cake pan wells and bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. While cakes bake, prepare the ganache by heating the heavy cream until simmering, then pour over the dark chocolate chips. Let sit 2 minutes and stir until smooth.
  9. Once cakes have cooled, spread or drizzle the ganache over each mini cake.
  10. Let ganache set before serving. Enjoy your festive treats!
