  • 6 large eggs
  • 1 cup almond flour
  • 2 tbsp psyllium husk powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp melted butter or coconut oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk the eggs until frothy.
  3. Add the cottage cheese and melted butter (if using), then mix until smooth.
  4. In a separate bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well incorporated.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick inserted comes out clean and the top is golden brown.
