French Onion Pasta Perfection

Indulge in the rich flavors of classic French onion soup, transformed into a comforting pasta dish. This French Onion Pasta recipe features caramelized onions, a savory broth, and melted Gruyère cheese, all tossed with your favorite pasta.

  • 1 pound pasta (such as spaghetti, linguine, or fettuccine)
  • 2 tablespoons olive oil
  • 4 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dry sherry or dry white wine (optional)
  • 4 cups beef broth
  • 1 cup grated Gruyère cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. While the pasta is cooking, heat the olive oil in a large skillet or pot over medium heat. Add the onions and cook, stirring occasionally, until they are deeply caramelized and golden brown, about 30-40 minutes. Reduce heat if needed to prevent burning.
  3. Add the garlic, thyme, salt, and pepper to the onions and cook for 1 minute more.
  4. If using, pour in the sherry or white wine and scrape up any browned bits from the bottom of the skillet.
  5. Pour in the beef broth and bring to a simmer. Cook for 10 minutes to allow the flavors to meld.
  6. Add the cooked pasta to the skillet with the onion sauce. Toss to coat. If the sauce is too thick, add some of the reserved pasta water until it reaches your desired consistency.
  7. Stir in half of the Gruyère cheese until melted.
  8. Serve immediately, topped with the remaining Gruyère cheese and fresh parsley.

Notes

For an extra touch, broil the pasta briefly after adding the cheese to get a bubbly, golden crust.
