Funfetti Whoopie Pie

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 1/3 cup rainbow sprinkles
  • For the filling:
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until combined.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Gently fold in the rainbow sprinkles.
  7. Drop tablespoon-sized dollops of batter onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set and tops spring back when touched.
  9. Remove from oven and cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. For the filling, beat butter until creamy. Gradually add powdered sugar, vanilla, and heavy cream, beating until smooth and fluffy.
  11. Match cookies into pairs by size and spread a generous amount of filling onto the flat side of one cookie. Top with the paired cookie to form a sandwich.
  12. Repeat with remaining cookies and filling. Chill for 30 minutes before serving if desired.
