  • 1 lb ground chicken
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter, divided
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • Salt and pepper, to taste
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/4 cup shredded mozzarella cheese (optional)

Instructions

  1. Cook fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large bowl, combine ground chicken, minced garlic, panko breadcrumbs, egg, Parmesan cheese, salt, and pepper. Mix until well combined.
  3. Shape mixture into 1-inch meatballs and set aside.
  4. Heat 1 tablespoon butter and olive oil in a large skillet over medium heat. Add chicken balls and cook, turning occasionally, until golden brown and cooked through, about 8-10 minutes. Remove from skillet and keep warm.
  5. In the same skillet, add remaining 1 tablespoon butter. Pour in heavy cream and chicken broth, stirring to combine.
  6. Simmer sauce for 3-4 minutes, then add Parmesan cheese and stir until melted and smooth. Season with salt, pepper, and red pepper flakes if using.
  7. Add cooked pasta to the sauce and toss to coat evenly.
  8. Return chicken balls to skillet, nestling them into the creamy pasta.
  9. Sprinkle with chopped parsley and mozzarella cheese if desired. Cook for another 2 minutes until cheese is melted.
