Garlic-Infused Smashed Carrots with Maple Glaze

Tender carrots smashed and infused with aromatic garlic, then drizzled with a sweet maple glaze for a flavorful and healthy side dish.

  • 1 lb carrots, peeled and cut into large chunks
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil the carrot chunks in salted water until fork-tender, about 10-12 minutes. Drain well.
  3. Place the carrots on a baking sheet and gently smash each chunk with a fork or potato masher to flatten slightly.
  4. In a small bowl, mix olive oil and minced garlic.
  5. Brush the garlic olive oil evenly over the smashed carrots and season with salt and pepper.
  6. Roast the carrots in the oven for 15 minutes until edges are golden and slightly crisp.
  7. Remove from oven and drizzle the pure maple syrup over the carrots while still warm.
  8. Garnish with chopped fresh parsley if desired and serve immediately.

Notes

For added texture, sprinkle toasted chopped walnuts or pecans on top before serving.
