  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a large bowl, whisk together olive oil, minced garlic, Parmesan cheese, parsley, lemon juice, Italian seasoning, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
  3. Preheat grill to medium heat or oven to 400°F (200°C).
  4. Thread the marinated chicken cubes onto the soaked wooden skewers.
  5. For grilling: Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and no longer pink inside.
  6. For baking: Place the skewers on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the chicken is cooked through.
  7. Serve immediately.
