Mouthwatering Garlic Steak Bites and Potatoes

Savory and satisfying, these garlic steak bites and potatoes are a quick and easy weeknight meal. Tender steak pieces and golden potatoes are cooked to perfection with a flavorful garlic butter sauce.

Ingredients

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs Yukon gold potatoes, cut into 1-inch cubes
  • 4 tbsp olive oil, divided
  • 4 tbsp butter
  • 6 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast potatoes for 20 minutes, flipping halfway through.
  4. While potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat.
  5. Add the steak bites to the skillet and cook for 5-7 minutes, or until browned on all sides and cooked to your desired doneness. Remove steak from skillet and set aside.
  6. Reduce heat to medium and add butter to the skillet. Once melted, add garlic, rosemary, thyme, and red pepper flakes (if using). Cook for 1-2 minutes, or until fragrant.
  7. Add the steak bites back to the skillet and toss to coat in the garlic butter sauce.
  8. Remove the potatoes from the oven and add them to the skillet with the steak bites. Toss to combine.
  9. Serve immediately, garnished with fresh parsley.

Notes

For a creamier sauce, add a splash of heavy cream to the skillet after adding the garlic and herbs. Serve over rice or quinoa for a complete meal.
