Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, minced
  • 4 scallions, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken thighs
  • 200 grams egg noodles
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the minced ginger, garlic, and scallions; sauté for 2-3 minutes until fragrant.
  2. Add the chicken thighs to the pot and brown them slightly on each side, about 3-4 minutes per side.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 20 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot, shred it with two forks, and set aside.
  5. Add the egg noodles to the simmering broth and cook according to package instructions, usually 4-5 minutes.
  6. Return the shredded chicken to the pot, stir in the soy sauce and sesame oil. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro if desired.

Notes

For a spicier kick, add sliced fresh chili or a dash of chili oil when serving.
