  • 4 ounces goat cheese, softened
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon zest
  • 1/4 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Optional: drizzle of olive oil

Instructions

  1. Wash and dry the mini peppers. Cut each pepper in half lengthwise and remove the seeds.
  2. In a medium bowl, combine the softened goat cheese, chives, parsley, lemon zest, and garlic powder. Season with salt and pepper to taste. Mix well until all ingredients are evenly distributed.
  3. Spoon the goat cheese mixture into each pepper half, filling it generously.
  4. Arrange the stuffed peppers on a serving platter. Drizzle with olive oil, if desired.
  5. Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes to the goat cheese mixture. You can also broil the stuffed peppers for a few minutes for a warm and slightly charred flavor.
