  • 1/2 cup (115g) unsalted butter
  • 8 oz (225g) bittersweet chocolate, chopped
  • 3/4 cup (150g) granulated sugar
  • 1/4 tsp salt
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (65g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Melt the butter and chopped chocolate together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat.
  3. Whisk in sugar and salt until combined.
  4. Add eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
  5. Sift in the flour and cocoa powder, gently folding until just incorporated.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 25-28 minutes until the edges are set but center remains soft and gooey.
  8. Let cool in the pan for 15 minutes, then invert onto a plate. Serve warm or at room temperature.
