This Greek Green Peas Stew, or Arakas, is a comforting and flavorful vegan dish simmered in a tomato-herb broth. Perfect as a light meal or side, it’s a delicious taste of the Mediterranean.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 lb frozen green peas
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in diced tomatoes and vegetable broth. Bring to a simmer.
  4. Add frozen green peas, dill, and parsley. Season with salt and pepper.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes, or until peas are tender.
  6. Stir in lemon juice before serving.

Notes

Serve warm with a drizzle of olive oil and a sprinkle of fresh dill, or with crusty bread for dipping in the delicious broth.
