This Heirloom Tomato Feta Salad is a burst of summer flavor! Sweet and juicy heirloom tomatoes are tossed with salty feta, fresh herbs, and a simple vinaigrette for a light and refreshing dish.

Ingredients

  • 1.5 lbs Heirloom Tomatoes, assorted colors and sizes, cut into wedges
  • 4 oz Feta Cheese, crumbled
  • 1/4 cup Fresh Basil Leaves, roughly chopped
  • 1/4 cup Fresh Mint Leaves, roughly chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Red Wine Vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. In a large bowl, combine the heirloom tomato wedges, crumbled feta cheese, chopped basil, and chopped mint.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the vinaigrette over the tomato and feta mixture.
  4. Gently toss to combine.
  5. Serve immediately or chill for later.

For an extra burst of flavor, try grilling the tomatoes lightly before adding them to the salad.
