  • 1 ½ cups (192g) all-purpose flour
  • 1 cup (125g) whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup (150g) packed light brown sugar
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • ¼ cup (60ml) honey
  • ¼ cup (60ml) milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  3. Add the brown sugar and cold, cubed butter to the flour mixture. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the honey, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. The dough will be slightly sticky.
  6. Turn the dough out onto a lightly floured surface and knead gently a few times until it comes together into a smooth ball.
  7. Divide the dough in half. Roll out one half of the dough to about ⅛ inch thickness.
  8. Use a pizza cutter or knife to cut the dough into desired graham cracker shapes (squares or rectangles).
  9. Transfer the graham crackers to the prepared baking sheet. Prick each cracker several times with a fork.
  10. Repeat with the remaining dough.
  11. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  12. Let the graham crackers cool completely on the baking sheet before serving.

Notes

For extra flavor, sprinkle the crackers with coarse sugar before baking. Serve with milk, yogurt, or use to make s’mores!
