Huevos Rancheros

Huevos Rancheros is a classic Mexican breakfast featuring fried eggs served on warm tortillas topped with a flavorful tomato-chili sauce. This dish combines bold, fresh ingredients for a satisfying and hearty start to your day.

Ingredients

  • 2 large eggs
  • 2 corn tortillas
  • 1/2 cup salsa ranchera (tomato-chili sauce)
  • 1/4 cup refried beans (optional)
  • 1/4 cup shredded cheddar or queso fresco
  • 1 tablespoon vegetable oil
  • 1/4 avocado, sliced
  • Fresh cilantro, chopped, for garnish
  • Salt and pepper, to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Lightly fry the corn tortillas until warm and slightly crisp, then keep warm on a plate.
  3. In the same skillet, fry the eggs sunny-side up, seasoning with salt and pepper.
  4. Warm the salsa ranchera in a small pot or microwave.
  5. Optionally, heat the refried beans until warm.
  6. To assemble, spread refried beans on each tortilla, place a fried egg on top, and spoon the salsa ranchera over the eggs.
  7. Sprinkle with shredded cheese and garnish with avocado slices and chopped cilantro.
  8. Serve immediately while warm.

Notes

For extra heat, add sliced jalapeños or a dash of hot sauce. You can also swap corn tortillas for flour tortillas for a different texture.
