This Irish Potato Pie is a delightful twist on a classic dessert. It features a creamy, lightly sweet potato filling baked in a flaky crust, perfect for St. Patrick’s Day or any occasion.

  • 1 (9-inch) pie crust, pre-made or homemade
  • 1 ½ pounds russet potatoes, peeled and cubed
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • Optional: Whipped cream or ice cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. In a large bowl, mash the potatoes until smooth.
  4. Add the softened butter and sugar to the mashed potatoes and mix until well combined and creamy.
  5. Stir in the milk, vanilla extract, cinnamon, nutmeg, and salt. Mix until everything is evenly distributed.
  6. Pour the potato mixture into the prepared pie crust.
  7. Bake for 35-40 minutes, or until the crust is golden brown and the filling is set.
  8. Let the pie cool completely before slicing and serving.
  9. Optional: Top with whipped cream or a scoop of ice cream before serving.

Notes

For an extra layer of flavor, sprinkle a little brown sugar on top of the pie before baking. Serve warm or cold.
