  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups potatoes, peeled and cubed
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium heat, breaking it apart with a spoon. Drain any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and add the cubed potatoes, oregano, basil, and red pepper flakes (if using).
  4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. If desired, stir in the heavy cream for extra richness.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For a spicier soup, use hot Italian sausage or add more red pepper flakes. You can also add other vegetables like spinach or kale for added nutrients.
