This creamy Jalapeno Popper Soup captures all the flavors of your favorite appetizer in a comforting bowl. Loaded with cheesy goodness, spicy jalapenos, and a hint of bacon, it’s the perfect warm and satisfying meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapenos, seeded and minced
  • 4 ounces cream cheese, softened
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, extra cheddar cheese, sour cream

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and jalapenos and cook for 1 minute more.
  2. Stir in the cream cheese until melted and smooth.
  3. Pour in the chicken broth and bring to a simmer.
  4. Reduce heat to low and stir in the cheddar cheese until melted and smooth.
  5. Stir in the bacon and season with salt and pepper to taste.
  6. Serve hot, topped with your favorite toppings.

Notes

For a spicier soup, leave the seeds in the jalapenos or add a pinch of red pepper flakes. Serve with crusty bread for dipping.
