Jalapeno Poppers Nourish Bowl

A vibrant and flavorful nourish bowl featuring spicy jalapeno poppers paired with fresh veggies, grains, and a creamy dressing for a balanced and satisfying meal.

  • 4 large jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1 cup mixed greens (spinach, arugula, kale)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 lime, cut into wedges
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cream cheese and shredded cheddar cheese until well combined.
  3. Stuff each jalapeno half with the cheese mixture and place them on a baking sheet lined with parchment paper.
  4. Bake the jalapeno poppers for 15-20 minutes, until cheese is bubbly and jalapenos are tender.
  5. Meanwhile, assemble the nourish bowl by combining mixed greens, cooked quinoa, cherry tomatoes, avocado slices, black beans, and corn in a large bowl.
  6. Drizzle olive oil over the bowl and season with salt and pepper; toss gently.
  7. Place the baked jalapeno poppers on top of the nourish bowl.
  8. Sprinkle with fresh cilantro and serve with lime wedges on the side.

Notes

For extra crunch, sprinkle toasted pumpkin seeds on top or swap cream cheese with Greek yogurt for a lighter option.
