  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and sugar until well combined.
  3. Stir in the melted butter and vanilla extract.
  4. Add the shredded coconut, chopped pecans, and salt. Mix until everything is evenly distributed.
  5. Pour the filling into the unbaked pie crust.
  6. Bake for 45-50 minutes, or until the filling is set and lightly golden brown. If the crust starts to brown too quickly, cover the edges with foil.
