  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol or monk fruit sweetener
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a small baking dish (approximately 6×6 inches).
  2. In a medium bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In a separate bowl, whisk together melted coconut oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Stir in sugar-free chocolate chips, if using.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let cool completely before cutting into squares.

Notes

For a richer flavor, add a tablespoon of coffee extract to the batter. Serve with a dollop of whipped cream or a sprinkle of powdered erythritol.
