This Keto Cheesy Crockpot Chicken and Broccoli Casserole is a creamy, low-carb meal perfect for busy weeknights. Tender chicken and broccoli are slow-cooked with a rich cheese sauce for a comforting and healthy dinner.

  • 4 boneless, skinless chicken breasts
  • 3 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a mixing bowl, combine cream cheese, heavy cream, sour cream, garlic, onion powder, salt, and black pepper until smooth.
  3. Pour the cheese mixture over the chicken in the crockpot.
  4. Cover and cook on low for 4 hours or until chicken is fully cooked and tender.
  5. About 30 minutes before serving, add the broccoli florets on top of the chicken and cheese mixture.
  6. Sprinkle cheddar, mozzarella, and Parmesan cheese over the broccoli.
  7. Cover and cook for an additional 30 minutes, or until the broccoli is tender and cheese is melted.
  8. Stir gently to combine before serving.

Notes

For extra flavor, sprinkle some crushed red pepper flakes before serving or serve with a side salad for a complete meal.
