Hearty Bowl of Kielbasa Potato Soup

This Kielbasa Potato Soup is a hearty and flavorful comfort food perfect for chilly evenings. With savory kielbasa sausage, tender potatoes, and a creamy broth, it’s a simple yet satisfying meal.

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa and cook until lightly browned, about 5 minutes. Remove kielbasa from the pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and add potatoes, thyme, and smoked paprika. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Return kielbasa to the pot. Stir in heavy cream and heat through. Do not boil.
  5. Serve hot, garnished with fresh parsley.

Notes

For a spicier soup, add a pinch of red pepper flakes or use spicy kielbasa. You can also substitute half-and-half for the heavy cream for a lighter soup.
