  • 2 boneless, skinless chicken breasts
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, combine lemon zest, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper to make the marinade.
  2. Place chicken breasts in a shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes.
  3. Preheat a grill or grill pan over medium heat. Grill chicken for 6-7 minutes per side or until cooked through and juices run clear.
  4. Let chicken rest for 5 minutes, then slice thinly.
  5. Assemble the nourish bowl by layering cooked quinoa, baby spinach, cherry tomatoes, and cucumber in a bowl.
  6. Top with sliced chicken and sprinkle with feta cheese if using. Garnish with fresh parsley.
  7. Drizzle with any remaining lemon-herb marinade or a light vinaigrette before serving.

Notes

For extra flavor, serve with a dollop of tzatziki or swap quinoa for brown rice or couscous.
