  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/4 teaspoon vanilla extract
  • For the Lemon Swirl:
  • 2 tablespoons lemon curd
  • 1/4 teaspoon lemon zest

Instructions

  1. Prepare the Crust: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9×13 inch baking pan.
  2. Bake the Crust: Bake the crust for 8-10 minutes, or until lightly golden. Remove from oven and let cool slightly.
  3. Prepare the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth and creamy. Beat in eggs one at a time, then stir in heavy cream, lemon zest, lemon juice, and vanilla extract.
  4. Create the Lemon Swirl: In a small bowl, mix lemon curd and 1/4 teaspoon lemon zest.
  5. Assemble and Marble: Pour the cheesecake filling over the baked crust. Drop spoonfuls of the lemon curd mixture over the cheesecake filling. Use a knife or skewer to gently swirl the lemon curd into the cheesecake filling, creating a marbled effect.
  6. Bake: Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  7. Cool: Turn off the oven, crack the oven door slightly, and let the cheesecake bars cool in the oven for 1 hour. This helps prevent cracking.
  8. Chill: Remove from oven and let cool completely at room temperature. Cover and refrigerate for at least 3 hours, or preferably overnight, before cutting into bars.
  9. Serve: Cut into bars and serve chilled.

Notes

For an extra touch of lemon flavor, sprinkle a bit of lemon zest on top of the bars before serving. These bars can be stored in the refrigerator for up to 3 days.
