Lemon Vinaigrette

Brighten up any salad with this zesty lemon vinaigrette. It’s quick, easy, and made with fresh ingredients for a burst of flavor.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon honey or maple syrup (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, and honey (if using).
  2. Season with salt and pepper to taste.
  3. Whisk until the vinaigrette is emulsified and the ingredients are well combined.
  4. Taste and adjust seasonings as needed.
  5. Drizzle over your favorite salad or use as a marinade.

Notes

For a smoother vinaigrette, you can use a blender or food processor. Store leftover vinaigrette in an airtight container in the refrigerator for up to 1 week.
