These loaded baked potatoes are the ultimate comfort food! Fluffy potatoes are topped with cheese, bacon, sour cream, and all your favorite fixings for a satisfying and customizable meal.

Ingredients

  • 4 large russet potatoes, scrubbed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the potatoes. Pierce each potato several times with a fork.
  3. Rub potatoes with olive oil, then sprinkle with salt and pepper.
  4. Place potatoes directly on the oven rack and bake for 60-75 minutes, or until easily pierced with a fork.
  5. Remove potatoes from oven and let cool slightly.
  6. Slice each potato lengthwise. Fluff the inside with a fork.
  7. Top each potato with butter, cheddar cheese, bacon, sour cream, and green onions.
  8. Serve immediately.
