This Loaded Hamburger Soup is a hearty and comforting one-pot meal packed with ground beef, vegetables, and cheesy goodness. It’s the perfect quick and easy dinner for a chilly evening, offering all the flavor of a loaded burger in soup form!

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup frozen peas
  • 1/2 cup shredded cheddar cheese, for topping
  • 1/4 cup sour cream, for topping (optional)
  • Chopped green onions, for topping (optional)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in the Italian seasoning, salt, and pepper.
  4. Pour in the beef broth and diced tomatoes. Bring to a simmer.
  5. Add the kidney beans, corn, carrots, and celery. Simmer for 15-20 minutes, or until the vegetables are tender.
  6. Stir in the frozen peas during the last 5 minutes of cooking.
  7. Ladle the soup into bowls and top with shredded cheddar cheese, sour cream (if using), and chopped green onions (if using).
  8. Serve immediately.

Notes

For a richer flavor, use bone broth instead of regular beef broth. You can also add a tablespoon of Worcestershire sauce to the soup while it’s simmering.
