  • 2 medium zucchini, diced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  4. Stir in diced zucchini, diced tomatoes (with juice), Italian seasoning, salt, and pepper.
  5. Bring to a simmer, then reduce heat and cook for 10-15 minutes, or until the zucchini is tender and the sauce has thickened slightly.
  6. Garnish with Parmesan cheese, if desired, and serve hot.
