A Bowl of Comforting Mac and Cheese Soup

This creamy Mac and Cheese Soup combines the comfort of classic mac and cheese with the warmth of a hearty soup. It’s a quick and easy one-pot meal perfect for a chilly day!

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 8 ounces elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Chopped bacon or chives for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Pour in chicken broth and milk. Bring to a boil, then stir in macaroni.
  3. Reduce heat and simmer for 8-10 minutes, or until macaroni is cooked through and tender.
  4. Remove from heat and stir in cheddar cheese and Parmesan cheese until melted and smooth.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped bacon or chives, if desired.

Notes

For a spicier soup, add a pinch of red pepper flakes or a dash of hot sauce.
