Maple-Glazed Chicken and Sweet Potatoes Feast

This Maple-Glazed Chicken with Sweet Potatoes is a comforting and flavorful one-pan meal. The sweet and savory glaze perfectly complements the tender chicken and caramelized sweet potatoes.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
  4. Pat chicken breasts dry and season with salt and pepper.
  5. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Sear chicken breasts for 2-3 minutes per side, until lightly browned.
  6. Place seared chicken breasts on top of the sweet potatoes on the baking sheet.
  7. Brush the maple glaze evenly over the chicken breasts and sweet potatoes.
  8. Bake for 20-25 minutes, or until chicken is cooked through and sweet potatoes are tender and caramelized. Internal temperature of chicken should reach 165°F (74°C).
  9. Garnish with chopped fresh parsley, if desired.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the maple glaze. Serve with a side of roasted broccoli or green beans for a complete meal.
