Maque Choux With Sausage Corn is a vibrant Louisiana dish combining sweet corn, smoky sausage, and creole spices for a comforting and flavorful skillet meal.

  • 4 cups fresh corn kernels (about 6 ears)
  • 1/2 pound smoked sausage, sliced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 1 medium tomato, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup heavy cream
  • 1 teaspoon Creole seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat butter in a large skillet over medium heat.
  2. Add sliced smoked sausage and cook until browned, about 5 minutes.
  3. Add chopped onion, green bell pepper, and garlic; sauté until softened, 4-5 minutes.
  4. Stir in fresh corn kernels and diced tomato; cook for another 5 minutes until vegetables are tender.
  5. Season with Creole seasoning, salt, and black pepper; mix well.
  6. Pour in heavy cream and stir to combine; cook for 2 more minutes to heat through.
  7. Remove from heat and sprinkle with chopped fresh parsley before serving.

Notes

For a vegetarian version, substitute smoked sausage with smoked tofu or omit it and add extra vegetables. Serve Maque Choux warm as a side dish or light main.
