Marinated Cheese is a flavorful and versatile appetizer featuring cubes of cheese soaked in a zesty blend of herbs, olive oil, and spices. Perfect for snacking or adding to salads and charcuterie boards.

  • 250g firm white cheese (such as feta or queso blanco), cut into cubes
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red chili flakes (optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon black peppercorns
  • 1/4 cup fresh parsley, chopped
  • Salt to taste

Instructions

  1. In a clean jar or bowl, combine olive oil, minced garlic, oregano, thyme, red chili flakes, lemon juice, and black peppercorns.
  2. Stir the marinade well to blend the flavors.
  3. Add the cheese cubes to the marinade, ensuring they are fully submerged.
  4. Sprinkle chopped parsley over the cheese and gently mix to combine.
  5. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to infuse.
  6. Before serving, bring the cheese to room temperature for best flavor. Drizzle some of the marinade over as a dressing or dip.

Notes

For enhanced flavor, serve the marinated cheese with crusty bread, olives, and fresh vegetables. You can also experiment with adding fresh chili or different herbs like rosemary.
